Week of Nov 6 – 12, 2023

Dear Central Florida Tri Club Warriors,

I hope this email finds you all in high spirits and filled with a sense of accomplishment! I wanted to take a moment to congratulate each and every one of you who participated in the races this past weekend. It was truly inspiring to witness our athletes pushing their limits and achieving greatness.

Let’s start by giving a big shoutout to our Ironman Florida participants: Beimal, Daniel P., Jonathan S. (UP), and Kennet (Jeff). Your dedication, perseverance, and unwavering spirit were incredible to witness. We are immensely proud of your accomplishments and the positive representation you brought to our club.

We also want to acknowledge the outstanding performances of Hardik and Lemmie in the New York City Marathon. Crossing that iconic finish line is a testament to your hard work and determination. You both inspire us to chase our dreams fearlessly.

And how can we forget the Cocoa Beach Triathlon? The picture captured from the event speaks volumes about the passion and resilience displayed by our athletes. We commend each and every one of you who participated and gave it your all. Your commitment to pushing boundaries is truly remarkable.

As we celebrate these achievements, let’s not overlook the importance of coming together as a community. This Friday, we have our social gathering at Gio’s, and I encourage all of you to join us. It’s an opportunity to share stories, connect with fellow athletes, and bask in the camaraderie that makes our club so special.

Now, onto something equally important – fueling our bodies with healthy goodness! As requested, I’ve included a delicious and nutritious oatmeal cookie recipe below:

Healthy Oatmeal Cookies: Ingredients:

  • 2 cups rolled oats
  • 1 cup mashed bananas
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond butter
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Optional mix-ins: dark chocolate chips, dried fruits, nuts, etc.

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine mashed bananas, honey/maple syrup, almond butter, applesauce, and vanilla extract. Mix well.
  3. In a separate bowl, whisk together the rolled oats, cinnamon, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until well combined.
  5. Optional: Fold in your choice of mix-ins, such as dark chocolate chips, dried fruits, or nuts.
  6. Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them apart.
  7. Bake for 12-15 minutes, or until the cookies are golden brown around the edges.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
